3 Day Meal Prep! (Eggs, Sloppy Joes, TexMex)

Hello!

This meal prep is super easy to make and easy to eat 🙂


Meals

Breakfast

Loaded Scrambled eggs (optional- make into sandwiches by making extra cloud bread!)

 

Lunch

Sloppy Joes

 

Dinner

TexMex Casserole

 


Shopping list

Loaded Scrambled Eggs

  • 6 eggs (2 eggs/meal)
  • 1 tbsp butter
  • shredded cheese
  • salt
  • pepper
  • Garlic Salt
  • Chopped Chives
  • 6 slices Bacon (baked & chopped) (2slices/day)

Sloppy Joes

Bread

Meat sauce

  • 2 tablespoons olive oil
  • 1 yellow onion
  • 4 garlic cloves
  • 113 lbs ground beef
  • 4 tablespoons tomato paste
  • 14 oz. crushed tomatoes
  • 1 tablespoon chili powder
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 2 teaspoons salt
  • ¼ teaspoon ground black pepper

Toppings

  • 8 tablespoons mayonnaise
  • 513 oz. shredded cheese

TexMex Casserole

  • 1½ lbs ground beef
  • 7 oz. crushed tomatoes
  • 7 oz. shredded cheese, for example Monterey Jack
  • 1 cup crème fraiche
  • 1 scallion, finely chopped (onion)
  • 2 oz. butter

Make your own Taco seasoning

  • 2 teaspoons chili powder
  • 2 teaspoons paprika powder
  • 1 teaspoon ground cumin
  • 1 – 2 teaspoons onion powder or garlic powder
  • 1 teaspoon salt (optional)

Prep Plan

  • Starting with baking the bacon , then start on the cloud bread then sloppy joe meat.
  • Once the bacon is done I’ll start on the eggs then Ill end with the Tex Mex 🙂
