Bacon Wrapped Stuffed Meatloaf

Hello!

This was my FIRST TIME making meatloaf ever! So it took me a while to complete and I was nervous about making sure it was fully cooked, but thankfully everything turned out great!

Review

  • I liked to cook it for a while to make sure its done and I put both sides on broil as well to darken it up and give it a nice look. The taste was amazing!

Ingredients

  • 1lb ground beef
  • 1 egg
  • 3 tbsp Almond flour
  • 12 strips bacon
  • 1/2 cup sour cream
  • 8 oz cream cheese (softened)
  • 1 bell pepper (chopped)
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2tsp onion powder
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper
  • 1/2 tsp italian seasoning
  • 1/2 tsp oregano

Directions

  • Preheat oven to 350
  • Weave bacon
  • chop pepper

  • Mix meat, egg, spices and half the chopped peppers

  • Spread onto bacon weave

  • Create the cheese filling by mixing sour cream, cream cheese (softened) and 1/2 the chopped bell peppers.

  • Place cheese filing on one side of the meat
  • Roll up
  • Bake for 40 mins leave tinfoil on bottom of the pan  (I did extra and flipped the meatloaf then baked an additional 20 mins and then broiled each side)
